HEALTHY BREAKFAST IDEAS:
Wholegrain cereal with chopped fruit and nuts
Hot porridge with banana for cold winter mornings, or cold porridge
oats mixed with oat clusters and chopped dates and banana for
warmer weather
Toast, crumpets or bagels with a little spread, jam and
banana
Chopped fruit and yoghurt
Fruit smoothies
Even the occasional egg and bacon with tomatoes, mushrooms and
fresh juice
And if you thought breakfast was boring, top North West chef Tom
Bridge has devised an extra-special idea just for Manchester Metro
readers to enjoy.
LUXURY SCRAMBLED EGGS WITH SMOKED SALMON
Ingredients:
20g butter
3 large free range eggs
15ml double cream
salt and freshly milled pepper
5ml freshly chopped parsley
65g Scottish smoked salmon
2 hot toasted crumpets, buttered
METHOD:
Gently beat the eggs together with the cream, salt and pepper. Add
the butter to a non-stick pan over a medium heat.
When sizzling, add the egg mixture and stir with a wooden spoon.
Continue to stir eggs for two minutes, scraping the egg off the
base of the pan as it sets.
When most of the egg mixture is set add the parsley and smoked
salmon strips. Remove from the heat and continue to stir for 30
seconds.
Place the hot crumpets onto warm plates and top with the scrambled
egg and smoked salmon.
